We insist on purchasing whole cattle to carefully judge each cut’s character before serving. Our sourcing lets you see the faces of the producers, assuring both quality and safety.

Expert butchers trim and age each cut to the ideal thickness, shape, and timing, and our chefs then draw out their fullest flavor, so you can savor the beef’s true richness on every plate.
