高山の飛騨牛焼肉店の和牛将軍店長、蒲生の挨拶写真

Greeting店長挨拶

Hello, nice to meet you. I’m Gamō, the manager of Wagyu Shogun. At our restaurant, we pour our heart into every single dish with the desire that “delicious Hida beef be enjoyed casually by both tourists and locals alike.” Wagyu Shogun was built through the combined efforts of local Hida cattle farmers, meat‐processing professionals, and the on‐site staff who support our restaurant. By leveraging each of our strengths and working together, we strive to share the true appeal of Hida beef with as many people as possible. Whether you’re creating a travel memory or treating yourself to a slightly indulgent dinner at home, our entire team dedicates sincere hospitality so that every guest can say, “I’m glad I came here.” We look forward to welcoming you.

—Gamō, Manager of Wagyu Shogun

Management運営形態について

A company of six united by a passion to showcase Hida beef.

Wagyu Shogun is a joint project formed by six local businesses dedicated to sharing the appeal of Hida beef accurately and widely. From the livestock farmers who raise cattle in Hida’s natural environment, to the craftsmen who handle and age the meat, to the restaurant team that delivers it to your table, we have established an integrated system—“raising, processing, and grilling”—all under one roof.

Background and Vision

We wanted to convey the appeal of Hida beef not only to tourists but also to local residents in the correct way. With that goal in mind, six local companies—farms, butchers, food processors, and restaurant operators—united to launch Wagyu Shogun. For locals, we aim to be a source of pride; for visitors, a place where they can encounter authentic Japan. With that wish in our hearts, we serve each plate of yakiniku carefully, one at a time, every single day.
